
“What the? It’s delicious!” In the manga ”そもそもウチには芝生がない” (Somo somo uchi niha shibafu ga nai) Keiko makes these pickles and gets a lot of praise (Vol.8 Chap.75).
I love Takuan, the usually yellow coloured radish pickles, so I tried it myself; and yes, it’s both super easy to make and lovely with rice!
Ingredients
- Daikon radish, sliced … 150g
- Salt … 2 tsp
- Sugar … 2 tbsp
- Vinegar … 1 tsp (or 2tsp to make it a lil sour)
Optionally add in a de-seeded chili pepper or sea kelp.
How to make
- Place all ingredients in a seal-able container.
- Rest it in the fridge overnight (or 2 nights to make them wrinkly and extra tasty).
I use my Hario pickling glass jar, but in the manga they put it in a zip lock bag and give it a squeeze.


I can easily make a meal out of these just by adding rice and soup.

December 29, 2025 at 9:20 amI have a Hario glass salting jar too, it wasn’t obvious from the recipe but I may be wrong, the picture looks like the daikon was mixed with the salt and sugar a bit to cover it too? I’m also experimenting with more vinegar – could be a bad idea but trying. For anyone who likes this recipe I had tried some carrot and cauliflower with the proportions here. But I learned that carrot and cauliflower maybe need more salt or be broken down more?
